SOUS CHEF

The Mildura RSL is seeking a Sous Chef to support our Head Chef in the operation of the Club's Bistro. Under normal operating conditions the Bistro has a seating capacity of 120 and is open for lunch and dinner every day. In this senior supporting role, you must be able to demonstrate: Proven experience in providing consistent quality food at all times. Leading a team under pressure by example. Maintain good relationships with suppliers and monitor quality. Maintain a food safety plan and safe hygiene practices. Provide input into menu planning and maintaining food costs. Participate in the organisation of ordering, cost controlling and waste management of food. This is a permanent position with full time hours, working a regular 5 of 7 day roster, including weekend, public holiday and evening shifts.
