Asparagus springs to life

THE demand for asparagus has significantly increased since Wayne and Lisa Stephens began producing the vegetable about three decades ago.

Stephens Asparagus has five farms in south western New South Wales, the main one based at Boeill Creek and the others in Coomealla.

The Stephens harvested their first asparagus of the season last week and it is still too early to predict how things are shaping up. 

Mr Stephens said peak harvest time was usually spring.
